Our blog is full of fun facts and top tips about bananas, but did you know that un-ripened they have different benefits? No? Well pay attention because here are the facts:

  • A slightly green banana will boost your metabolism with 12.5 grams of resistant starch (7.5g more than when ripe!)
  • They can help control your blood sugar levels, and cut your risk of heart disease by lowering your cholesterol levels
  • 1 serving of boiled green banana contains 14% of your daily fibre requirements, and seeing as fibre slows digestion, you’ll be fuller for longer.
  • Green bananas are very high in vitamin B6, providing 39% of your daily value.
  • As with ripe bananas, green ones are also super rich in Potassium, a tasty way to stay on top of your blood pressure.

Now you know the benefits, here’s a tasty recipe to get you hooked on the green stuff:

Faux fries!

vegetable oil, for deep frying

small handful small (unripe) green bananas, cut into thin slices

¼ tsp ground turmeric

¼ tsp salt

chilli powder, to taste

Heat the vegetable oil in a deep, heavy-based saucepan until a breadcrumb sizzles and turns golden-brown when dropped in. (CAUTION: hot oil can be dangerous – do not leave unattended.)

Add the slices of banana to the pan and, using a slotted spoon, try to separate the chips from each other as they fry.

Mix together the ground turmeric and salt in a small bowl.

When the banana chips are beginning to become crisp and the edges are golden-brown, carefully sprinkle over the turmeric and salt mixture. Stir gently to combine. When the banana chips are golden-brown and cooked through, remove them with a slotted spoon and drain on kitchen paper.

Sprinkle over chilli powder, to taste, and serve at once.
